Normally I’m not a huge fan of corn. Well, unless it’s fresh garden corn smothered in butter. That I’m a fan of.
My kids love it so I’m still required to make it. But as far as eating canned corn or frozen corn for dinner I usual pass.
One night while I was making dinner I decide to spice up our frozen corn a bit. By spice it up I meant literally spice it up with jalapeños, and I absolutely loved it.
This jalapeño corn is so creamy and delicious, and it’s so simple to make. The hardest part is turning on your crockpot.
Simply put a bag of frozen corn, butter, cream cheese, jalapenos and garlic powder into your crockpot. Season with a little salt and pepper and you’re done. It doesn’t get any easier than that.
This corn is now a family favorite at my house. I’m not sure I can go back to boring ole plain corn after this.
You can adjust the hotness by adding a little less, or a little more jalapenos to fit your taste.
- 1 bag frozen corn(12 ounces)
- ¼ block cream cheese
- 2 tablespoons salted butter
- ¼ cup canned, sliced jalapenos (I use hot)
- ¼ teaspoon garlic powder
- ¼ teaspoon salt
- ¼ teaspoon black pepper
- Turn crockpot on high
- Add frozen corn, jalapenos, butter, cream cheese and garlic powder
- Add salt and pepper
- Cook on high for 2 to 3 hours, stirring every 30 minutes
